This isn’t an easy message to write, but after much reflection, it’s time once again to realign. We’ve made the difficult decision to close Weiss Ferments. There are many reasons behind this choice, but above all, it comes down to health and well-being. While it’s bittersweet to say goodbye to the brewery and the Biergarten, we’ve decided to shift the focus solely onto the sourdough bread. This isn’t an ending—it’s a transition.
Weiss Ferments began with an idea: that simple, wholesome ingredients crafted into thoughtful products can reconnect us to nature, to ourselves, to each other. Our sourdough bread was the first product on that journey and continues to be the heart and soul of what we do. It is time to give it the full attention it deserves. So while Weiss Ferments is coming to a close, we’re excited to introduce Leavened—a bakery dedicated to the craft of sourdough.
This shift allows us to bake more bread, refine it further, add products, distribute it in more areas and share it with more of you. We believe bread has always been more than just sustenance; it’s a symbol of community, of resilience, of restoration. So we see Leavened as a chance to build something rooted in tradition, yet made for today.
